Drunken sausage is a delicious recipe using chorizo, onion and cider! Other verions can be made with red wine but for me it´s the sweetness of the cider is what makes it so yummy.
4 red chorizo (fresh or dried in a packet)
2 large onions
1 large bottle of cider
Little olive oil
Cut the chorizo into slices and heat in a large pan with a little olive oil. When the red juices from chorizo start to bubble in the pan add the chopped onions and fry. Cook until the onions start to soften (add a drop more oil if neccessary) and then add the bottle of cider. Bring to the boil and then simmer on low for approximately 45 minutes or until the sauce reduces and slightly thickens. Serve with fresh crusty bread.
